You’ve never seen a salmon prepared like this before. With a light sear on the exterior of the fillet, but near raw on the interior, you won’t believe the textured yet melt in your mouth salmon dream.

What is Ponzu Sauce?

Ponzu is made by mixing mirin, rice vinegar, katsuobushi flakes (from tuna), and seaweed (kombu) over medium heat. The fusion is then cooled, strained to remove the katsuobushi flakes, and finally the juice of one or more of the following citrus fruits is added: yuzu, sudachi, daidai, kabosu, or lemon.
