a crispy and spicy ecstasy
Spicy tuna in tempura batter with masago mayo
The spicy crunch of this roll will have you ordering them one after another. No one can resist the delightful cripsy tempura shell, with not only spicy tuna but masago mayo to really kick up the spice. This also creates a more complex spice profile than regular spicy tuna rolls. This dish goes great with a avocado-heavy roll or dish to balance this roll’s fire-y goodness.
What is masago mayo?
Masago is the processed eggs of the capelin fish. The capelin is a small fish that lives in massive schools throughout the northern Atlantic and Pacific oceans. It is usually an orange reddish colour. If you have ever tried tobiko, you will recognize some similarities to masago. The flavour of masago is more subtle than tobiko, and somewhat less crunch.
